Each recipe makes enough for four servings.
Marinating times:
- 15-20 mins – fish, seafood and vegetables
- 1-3 hours – small portions of meat and poultry eg diced meat for kebabs, think steaks.
- 6-12 hours – large joins of meat and whole chickens.
Method
Simply combine all the ingredients in a bowl, add your chosen meat/fish/veg and leave to marinate (see timings below) before grilling until cooked through. Each recipe makes enough for four servings.
1. Cuban Mojo
Give your BBQ a Cuban twist with this zesty orange and lime marinade.
- 1 orange, juice
- 1 red chilli, finely chopped
- 2 spring onions, finely chopped
- 2 tbsp vegetable oil
- 1 lime, finely grated zest
2. Tandoori
Try this Indian inspired marinade for a warming, yoghurt based coating that helps keeps meat and fish tender
- 100ml Greek-style yoghurt
- 25g ginger, finely grated
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 1tsp vegetable oil
3. Herby
Go classic with lemon, rosemary and garlic for a super easy herb marinade
- 1 lemon, zest and juice
- 2 garlic cloves, crushed
- 3 sprigs rosemary, finely chopped
- 5 tbsp olive oil
4. Sticky
Honey caramelises deliciously on the BBQ in this sticky marinade with a touch of chilli heat.
- 2 garlic cloves, crushed
- 1 red chilli, finely chopped
- 15g fresh parsley, finely chopped
- 3 tbsp honey
- 100ml vegetable oil
5. Tropical
Celebrate summer with tropical flavours in this fruity pineapple and ginger marinade.
- 227g tin pineapple slices in juice, drained and finely chopped.
- 50g ginger, finely grated.
- 2 tbsp soy sauce
- 2 tbsp vegetable oil
